With the Holiday yesterday and throughout the week, I found just how very much I miss being with my family for the Holidays. My Dad, both my sons and my grandsons live 3 hours away from us. That’s really NOT that bad and it COULD be worse but it’s just not possible to be with everyone for every Holiday.
When I was growing up, I always dreamed that my children and grandchildren would be near so they could just pop in anytime they wished, join us for Sunday dinners, be close enough that I could watch them play football, basketball, raise their lambs for the fair each year and have them KNOW how very much I love them. But it wasn’t to be…….life has a strange way of changing our plans for our lives.
But I WAS truly thankful that I could spend Thanksgiving with my daughter who DOES live near to us and will be delivering our first granddaughter in February!! What a blessing!
I contributed to their wonderful meal by fixing Jessi a Lemon Meringue pie, her favorite. I actually used this recipe from Betty Crocker and it was SCRUMPTIOUS! I was disappointed in the meringue. Although I THOUGHT I had it sealed to the pie crust prior to baking it, it still began to shrink away from the crust. I think I’ll double the meringue recipe the next time and see what happens then.
