Yes indeed! Canning Season is in Full Swing around here! Jessi (my daughter) and I have been busy busy busy, up to our elbows in green beans, tomatoes, corn, peaches and more! I have to say that…..honestly…..I’ve missed doing this. It gives one such a sense of accomplishment and pride at preparing food for your family that will taste so yummylicious this winter.
This was my latest project. I LOVE the mixed dilled veggies in jars from the grocery store but I’d rather have my own minus the extras (preservatives, etc.) that you find in the ingredients list on those from the store.
I added cucumbers, carrots, and peppers to the jars along with dill seed, garlic, and mustard seed…..followed with a hot brine of vinegar, water, and salt.
It is going to be hard to wait a few weeks to taste this mix. I’m keeping my fingers crossed that the taste will be what I’m looking for.
And NEXT week…….we’ll be doing MORE corn at Jessi’s.
I’m seriously thinking about trying my own pumpkin puree this fall and maybe even some applesauce!!
