I’ve been searching for healthy recipes again and ran across this one for Basil Cucumber Salad. It’s that time of year when we can get fresh vegetables and fruit from our local farm markets and it’s so much more refreshing to be able to eat foods that are high in nutrition and well…….fresh!

I have to say that I had so much fun making this salad. I felt like a chef! LOL And we actually LOVED it! Often times when I try something new, it turns out less than desirable. But this one gets a thumbs up in our house!

It’s a basic raw vegetable recipe that includes cucumber, cauliflower, red onion, and fresh chopped basil……topped with a creamy lemon dressing made up of lemon juice, hummus, pure maple syrup, dijon mustard, and a pinch of sea salt. This dressing brings the taste buds alive! So good and so good for you!
